Nitrogen gas in Denver: what it actually does in a bar
Nitrogen pushes beer without dissolving into it the way CO2 does, which is why long draw lines and nitro stouts depend on it. Blended with CO2, it lets a Denver bar run a long line at the pressure the altitude needs without over-carbonating the beer on the way to the faucet.
The other uses on our list are packaging and product blanketing, where an inert gas sits over a product to keep air off it. Nitrogen is inert in these applications, which is the whole point.
